You’ll find this light snack on a sunny café terraces in countless squares throughout Brussels and much of Belgium. You can find fromage blanc (a fresh, soft cheese) in finer grocery stores in the U.S. I bought mine at Trader Joe’s. Radish slices are traditionally added but you could add cucumbers and any fresh herbs you have around. In this kicked-up version, I sprinkle the fromage blanc with some Middle Eastern za’atar, one of my favorite spice blends (recipe follows).
Good country bread, sliced
Good quality butter
Salt and pepper
Wash and finely slice radishes. Chop chives. Spread butter on bread, followed by a thick layer of fromage blanc. Generously salt and pepper. Arrange radishes and chives. Sprinkle with Za’atar. Open beer. Enjoy.

3 tbs. dried thyme
2 tbs. ground sumac
2 tbs. sesame seeds
1 tbs. dried oregano
Combine all ingredients and store in airtight container.
